Compliments of the Chef - Pig Head Mortadella (Hand-Mixed Pork, studded with Pistachios and Truffles), Brassica Mustard, Warm Quebec Raclette Cheese & Cast Iron Baked Pan Bread. We never would have guessed the Mortadella was cooked inside a Pig's head (see picture below) because it was delicious!

Spring Creek Butcher Steak - Chimichurri, Argula and Fried Matchstick Potatoes (reminded me of Hickory Sticks). The steak was super tender, just how I like it.

This is the reason why I wanted to try Charcut and it was definitely worth the hype! The girls were skeptic to try this dish because of the "Duck Fat" but everyone ended up liking it. I loved the smell of the truffle gravy!

If you love trying new restaurants, I would HIGHLY recommend trying Charcut in downtown Calgary (connected to the brand new Hôtel Le Germain). The food was amazing and the staff were super friendly. Thank you to Chef Connie for a wonderful evening! Try the Duck Fat Poutine, you won't be disappointed.
